The Full Wheel
Not ones to be scared off by hard work, brothers Andy and Mateo Kehler have been making cheese in Vermont’s Northeast Kingdom since 2003. When they bought “the old Jasper Hill farm,” they built a creamery, complete with an aging facility underneath, all the while working on the pastures for the best grazing possible. Named after Anne Harbison (an active member of the community), this cheese captures happiness on a spoon! Wrapped in bark gathered from Jasper Hill’s own woodlands, this bloomy-rind is creamy and sweet, earthy and bright – and with a texture we like to call “epicurean queso!” Peel the top off and dive straight in with a crusty baguette.
