South African native Red Peppadew peppers are the fruit of the Juanita, pickled in a simple sugar and vinegar mixture. “Protected Designation of Origin” (PDO) means they are name-protected to be grown & finished only in South Africa. Note that the seeds have been removed – this is not to curb a “heat” factor, as these are more sweet than spicy – rather to protect PDO (removal of the seeds prevents illegal propagation). It’s hard to believe that these were only discovered in 1993, because we don’t know what we would’ve done without them! They tune our cheesemongers into creative pairing philosophies: try “Fire with Fire” with a cheese that has closely-held piquant notes; Or "Opposites Attract," temper the sweet-spiciness of peppadew peppers by stuffing with cool, fresh chevre, or a hunk of milder blue.
